How are your New Years resolutions going? As much as I don’t really have New Years resolutions, I usually spend January trying to counteract mince pies and prosecco (sigh) and cramming in as much veg as humanly possible. If you’re anything like me, then that initial motivation (or maybe creativity?) may be starting to wane as we’re over three weeks in. But fear not, British Military Fitness have got this helpful recipe book for you to download (here!), which features 24 breakfast, lunch, dinner and snack recipes to keep your meal ideas going well into February. Oh and it features a lunch recipe from me (eeepp!).
There it is, my face looking back at me from a book. Still finding that a bit weird. Anyhoo, I’m always raving about preparing quinoa lunches for work and the recipe I have featured in this book is one of my favourites, apple and feta quinoa salad. It’s a really simple, but nutritious recipe containing kale, apples, walnuts, quinoa and feta. The full recipe is available in the book (obviously!), along with a review of each dish by nutrition coach, Ben Coomber.
Here’s what Ben said about this recipe: “This dish makes great use of apple as it helps cut through the fat content in feta and balances out its saltiness. It also gets the thumbs up in terms of healthy omega-3 fats within walnuts”
